From Peter Sisseck of Pingus fame, San Francisco Javier is a tiny affair by Sherry standards. Encompassing just 10 hectares (8 in the Viña Corrales in the Balbaína pago and 2 in the Macharnudo pago), the estate seeks to express terroir in Sherry, a category that’s usually more defined by process and elevage. Sherry, of course, takes a prodigious amount of time to produce, and it will be a a while before Sisseck’s first solera is bottled strictly from his own work. In the meantime, the wines will come in part from an old solera that has been refreshed for decades from the same Balbaína pago that Sisseck is currently cultivating.
