Cyril de Benoist’s Domaine du Nozay is in the far north of the Sancerre appellation, in Sainte-Gemme-en-Sancerrois. The terroir and micro climate here yield some of the region’s most mineral-driven wines, with chalky Kimmeridgian limestone that shines through the strident acids. Cultivated organically and Biodynamically, the wines at Nozay are vinified naturally and with minimal intervention, employing a combination of stainless steel, clay amphorae, and large wooden barrels.
