Giovanni Arcari works his tiny vineyards in Franciacorta, just outside the town of Cremona. Focusing just on Chardonnay, Arcari makes the most traditional wine possible, eschewing chemical interventions in the vines and even non-grape sugars for his dosage. Instead, the vins clairs are dosed with sweet, unfermented grape must from juice that was held at low temperature. The resulting Franciacorta is not only completely natural, but also of absolutely stunning quality.
