Winemaking Information

Whole-clusters are gently direct pressed and 20 to 25mg per liter of sulfur is added. The wine ferments spontaneously in Burgundian barrels and does not go through malolactic fermentation. After aging in barrel six months on its lees, the wine is bottled without dosage.
