Winemaking Information

The fruit was gently pressed and 20 to 25mg per liter of sulfur is added before the juice fermented with natural yeasts in Burgundian barrels without going through malolactic fermentation. It was aged in barrel on is lees for seven months before being bottled on May 5th, 2004.

Fun Facts: This 2003 vintage release comes from two lieu-dits in the village of Oeuilly: “Four à Chaux” and “La Perchape”. They were each vinified individually (as are all the parcels at Tarlant) and these two plots were chosen in a blind tasting to be blended and released as a "snapshot" of the vintage.
