Winemaking Information
Whole-clusters are gently direct pressed. 20 to 25mg per liter of sulfur is added at press, with occasional additions to reserve wines as well. The wine ferments spontaneously in Burgundian barrels and does not go through malolactic fermentation. After aging in barrel eight months on its lees, the wine is bottled without dosage as a base wine or kept as as reserve wine.
