Winemaking Information
Whole-clusters are direct pressed slowly and carefully in a Coquard press and 20 to 25mg per liter of sulfur are added. After an 18 hour clarification, the juice is racked off its gross lees. The wine ferments spontaneously and ages in Burgundian barrels on its lees with zero intervention for 16 months.
