Winemaking Information
After the fruit is gently pressed, 20 to 25mg per liter of sulfur is added to the juices, which then ferment on their native yeasts in Burgundian barrels without going through malolactic fermentation. The wine was aged on the lees for six months in barrel before being blended and bottled with no dosage on May 4th, 2006. It aged sur lattes for 13 years and nine months before being disgorged on February 14th, 2020.

Fun Facts: The Tarlant's 2005 vintage bottling comes from five lieu-dits: “Mocque Tonneau”, “Four à Chaux” and "Le Métier" in Celles-lès-Condé along with “Les Forgeottes” and “L’Enclume” in Oeuilly. Each parcel was picked in a blind tasting to create a blend that captured a snapshot of the vintage.
