Winemaking Information
Whole-clusters are gently direct pressed and 20 to 25mg per liter of sulfur is added. The wines ferments spontaneously in Burgundian barrels and did not go through malolactic fermentation. After aging six months on their lees, the barrels were blended with a small amount of red wine and bottled without dosage on May 4th, 2005.

Fun Facts: This vintage bottling comes from four lieu-dits: “La Perchape” in Œuilly, “Four à Chaux”, “Mont Martin”, “Haut du Four à Chaux” in Celles-lès-Condé. They were each vinified individually (as are all the parcels at Tarlant) and these four plots were chosen in a blind tasting to be blended and released as a "snapshot" of the vintage.
