Winemaking Information
Whole-clusters are gently direct pressed. 20 to 25mg per liter of sulfur is added at press. The wine ferments spontaneously in Burgundian barrels and does not go through malolactic fermentation. After aging in barrel six months on its lees, wine is pulled from a solera reserve started in 2007 and bottled without dosage. The new vintage is then added to the solera.
