Winemaking Information

Whole-cluster, 15 day maceration. Fermented and aged in 225l barrels for eight months. While usually bottled without SO2, 15 mg per liter may be added at bottling if deemed necessary. 
SO2: Vintage dependant
Fining/Filtration: Unfined/Unfiltered

Fun Facts: This wine comes from a single parcel of estate fruit called La Boissière (the same parcel that produces a Pineau d'Aunis under that name).
