Whole-cluster, 15 day maceration. Fermented and aged in 225l barrels for six months. Though usually bottled without S02, 15 mg per liter may be added at bottling if deemed necessary.

Fun Facts: This wine comes from purchased organic fruit from a single parcel called La Ceverie. Pierre-O considers this the best terroir he works and releases this in small quantities as his top cuvée.
