Winemaking Information

Spontaneous fermentation with native yeast lasts four to six weeks. The wine is then racked into old tonneaux and stainless steel tanks for two to three months of aging on the fine lees. The wine is then lightly filtered and bottled for its secondary fermentation. The wine averages two years of aging sur lattes with a dosage of six grams. The wine often has a small, discernable amount of residual sugar.
SO2: During winemaking
Fining/Filtration: Light filtration at bottling (non-sterile)

Vineyard Information

Appellation: Vouvray
Soil Composition: Flint, Clay, Tuffeau, Limestone
Farming: Organic (certified)

Fun Facts: Pinon makes two brut sparkling wines, both of which are made with the méthode traditionelle. The later-harvested, riper fruit goes into this zero dosage bottling to allow for a better balance in the final wine (while the lower-sugar, higher acid grapes go into the brut bottling that receives a dosage and shorter aging).
