Winemaking Information
In vintages when it is possible, a rigorous selection is made in the vineyards of fruit that is affected by noble rot. After a slow press, the juice spontaneously ferments for three to four months without added yeast or chaptalization. This process is then halted by cooling down the wine and racking it. Aging is carried out in barrels on the fine lees for four to five months.
