Winemaking Information
The Pinot is destemmed while the Gamay remains whole cluster. Maceration lasts for 15 days for the Gamay, and eight to ten days for the Pinot. Fermentation and aging happen in concrete vats and enamel lined tanks, with a few old barrels for the Pinot Noir. Small amounts of S02 are added at press, after malocatic fermentation and at bottling.
