Winemaking Information

The grapes are destemmed and macerate for 20 days. Fermentation and aging is in stainless steel and lasts 10 months. Sulfur additions are: 10mg per liter before fermentation, 15mg at bottling.
SO2: During winemaking, at bottling
Fining/Filtration: Light filtration at bottling (non-sterile)

Fun Facts: Château Fouquet is a separate property from Filliatreau that has been worked organically since the early 1990's. It is now certified biodynamic.
