Winemaking Information

The grapes are direct-pressed then half the juice gets fermented and aged in old barrels while the other half is fermented and aged on the lees in stainless steel. Sulfur additions are: 20mg per liter at press, 20mg at bottling.
SO2: During winemaking, at bottling
Fining/Filtration: Light filtration at bottling (non-sterile)

Fun Facts: Château Fouquet is a separate property from Filliatreau that has been worked organically since the early 1990's. It is now certified biodynamic.
