Winemaking Information
Direct press, an intentional oxidation of the must, 12 hour decantation. Fermented and aged on the lees in 420l demi-muids for 12 months. The demi-muids are then blended and stay in vats for four months before bottling. 20 mg per liter of sulfur added at bottling.

Fining/Filtration: Light filtration at bottling (non-sterile)
