Winemaking Information
The grapes are destemmed and see a four week maceration in an open-top vat. Both grapes are vinified individually. Fermented and aged in barrels of all sizes for one to two years.
SO2: 30mg per liter at bottling

Fun Facts: This wine is called "Migrating Grapes" and part of the Arches de Bellivière négociant lineup. The purchased fruit is certified biodynamic and comes from the Mont Ventoux in Provence. The Nicolas harvest it themselves and truck the grapes back to the Loire to vinify it their cellar.
