Winemaking Information

One month in vat for alcoholic fermentation, breaking the cap, systematic blending of free run wine with press wine, natural malolactic fermentation in barrels for four weeks. Maturing one year in three to five year old barrels.
SO2: 30mg per liter at bottling
Fining/Filtration: Unfined/Unfiltered

Fun Facts: From five very old parcels. This wine is not made every vintage and is named after Eric's neighbor. They used to run the farm next to them and were very sweet and helpful to the Nicolas family in their beginnings.
