Winemaking Information

The grapes are destemmed and softly pressed to start spontaneous fermentation. A portion goes into old barrels and with a maceration on the skins (no pumping over or punching down) that lasts approximately 10 days. The remaining fruit ferments in clay amphoras and macerates for approximately a month. The wine completes malolactic fermentation, ages for 10 months on its lees in a mixture of used oak barrels and clay amphora.
SO2: No sulfur added to the wine
