Whole-cluster, six day carbonic maceration. Pressed into cement tanks for fermentation and aging. S02 additions are up to 1.5 grams per hectoliter on the harvested grapes and 1.5 grams after malolactic fermentation.

Fun Facts: This wine comes from a single vinyard that produces very juicy grapes that lend themselves to carbonic maceration. It just so happens to be behind the house of Mr. Carbonier, who everyone calls Carbo. So the wine is called "The Vine Just Behind Carbo's House". Get it?
