50% destemmed, 50% whole-cluster. 12 to 20 day maceration. Fermented in cement tanks and aged one year in old 225 and 500l barrels. S02 additions are up to 1.5 grams per hectoliter on the harvested grapes and 1.5 grams after malolactic fermentation.
