Alice and Olivier de Moor’s wines are among the most sought-after Chablis in the world. Absolutely unique among Chablis in their richness, and yet they are still amazingly energetic and terroir-driven.
The winery is located in Courgis, and most of their vines are located here and in Saint-Bris. The vines are old, with some well past the century mark. All work in the vines by Olivier is organic, with hand-harvesting into small bins. In the winery, Alice’s province, work is minimal-intervention, with gravity flow, little to no sulfur, fermentations are all natural and take place mainly in neutral oak, with some use of stainless and amphora.
The couple’s Les Vendangeurs Masqués project began after several frost-affected vintages. The Vendangeurs wines come from fruit, juice, and/or finished wines made by the de Moor’s friends throughout France, from regions as far-flung as Alsace and Roussillon.
